Lunch, anyone?

OK – so I am lazy. I admit it. Usually for lunch I go downstairs and get Jimmy Johns or Burrito Beach or some such junk. But I’m getting a bit tired of paying for it everyday. So I have been doing googles on “easy” pack lunches. And some peoples definition of easy is really histerical. I mean I don’t see myself making smoked salmon tea sandwiches anytime soon, seriously, something I can just throw together, salmon? First problem, fish = gag. Second problem has already been addressed, I’m lazy! So if anyone has any suggestions for lunches that are a bit healthier than fast food, but not too large or cumbersome to make, I’d appreciate it. Stuff I’ve done in the past, so you get an idea of where my skills are, tuna (miracle whip, tuna, pickle relish maybe a boiled egg if I’m really ambitious on a Sunday) + crackers; brocolli + carrots + veggie dip; pita bread + hummus; I’m all for salad, just need a container that will segregate the dressing without having to carry 15 things on the train.

I’m not a big leftover person as E eats the leftovers when he’s working from home (which is pretty much 4 days a week now, yeah, I know, sucks to be E). So let me know your good ideas so I can steal them!!

Oh, and I almost forgot. I am not a sandwich person. I could probably manage it once a week tops, and even then I can’t eat deli meat (gag) regularly and I really don’t see myself roasting a turkey anytime soon. I do try to avoid overly processed foods like deli meat and freezer meals (and all the afore mentioned fast food places, I know!!)

    Have you tried any of the prepared salads that already compartmentalize everything for you? I’ve had some very yummy ones for $3-4 (spinach salad w/ bacon and egg… cesar… broccoli slaw… etc.)

    Are you a soup person at all?

    Other than that, no grand ideas. After all, I just eat leftovers from breakfast and lunch – today was cantaloupe and blackberries. :)
